Cheap and Quick Week Night Dinners

 Your oldest has practice from 3:30-5, the middle one has practice from 3:30-4:30 and your youngest is actually off today, but has to study for a spelling test that is tomorrow!  Oh, and all these small humans need to eat!  Girl, don't worry I got you!! 

I do crock pot meals a lot, but my kiddos get pretty bored of those.  I try to mix things up and make fast meals when I can. 

Here are my top 5 quick, cheap, and easy dinners that are kid and husband approved! 

1) Chicken Tetrazzini (What a word!!) 

Get out that 9x13 girl!  This is a good one!!

This one is super yummy!!  

Get some garlic bread and a bag of salad and you have a meal!  You can prep this one a head of a time too and throw it in the fridge, pop in the oven when you are ready to fix it.  I usually buy a big bag of frozen chicken and then I'll boil the chicken when needed.  The left overs are great too! 


2) Easy Cheesy Baked Tortellini 


This is one of my favorites!!  Again, garlic bread and a salad and boom!  Dinner is served. 

Another one that is cheap, and you can make ahead of time.  You can use sausage, ground turkey, ground chicken, shredded chicken, or make this bad boy meatless!  I have added in mushrooms and spinach before and that was delicious too!  Sometimes I'll out mushrooms and spinach in the food processor and add that to my meat for some extra veggies for the kids. 


3) Lazy Lasagna



My kids love this one!!  Also, you can have this ready in 30 minutes and it can be a meatless meal! You can add meat to it, but I usually don't and it is great!! I get the ravioli in the frozen section.  This is another one I will add spinach and mushrooms too for some extra veggies!  

And,,,you know what I'm gonna say...garlic bread and salad! 


4) Beef stroganoff Casserole 



This is a good one too!! I serve with green beans and mashed potatoes.  I do leave off the French fried onions because my kiddos don't care for those. This is a good one to make ahead and be ready really quickly.  If you have a left over beef roast this is great for the left over beef.  And the left overs are great too!! 

5) Taco Pie


Huge hit with this one!! I do leave off the Fritos in the casserole. My husbands says they get soggy, I don't mind them though.  We serve the Fritos on the side and just add them to top along with all the taco toppings you can imagine. Get you some tortilla chips, guacamole, and salsa and you have dinner.  I do not make this in a pie pan, I use my 9x13 for this one and usually double the recipe for my crew.  Again the leftovers are amazing!! 



My favorite 9x13s have lids!!  This way I can make them ahead of time and keep them in fridge and the left overs are way easier to store.
